I once had french fries that were so good. I suggested to my dinner companion, who happened to be a restaurant critic, that they tasted like they were line caught. He stole the line. He used it in his review. I did not get any credit. I don't care. But it reminds me how much I love french fries.
I do not like the frozen product that is coated with all kinds of things and just throw it into the fryer and tossed on a plate. I just they just I don't like them. What I like are fresh potatoes cut and parboiled and then double fried and crispy and they're a lot of trouble but they're really great. But one thing I do know is that for a couple of weeks in June the starch in a potato just doesn't quite work.
So I'll go with the frozen ones or I'll just go without. I know. Roasting potatoes though are Pretty darn good. Savoring Sonoma, I'm Clark Wolf for KRCB.
