There's fresh cheese available pretty much year round, but I really like to have fresh cheese in the spring, particularly goat cheese, what the French would call fromage de chèvre. We just call it chèvre, or chev, or California chèvre because well, Laura made it famous, and Jennifer Bice made more.
We still have, and again we have, some lovely fresh cheese makers here in Sonoma County. The moms have given kids, and the milk is flowing. It is delicious and fresh, and wholesome, and healthy, and wonderful. I love fresh cheese with a drizzle of olive oil on some fresh fruit between Pancakes, who knows?
