Eggs are precious. Let's be honest. There was a time when in New Jersey (you heard of it, it's over there on that other side) outlawed eggs over easy because their egg supply was so covered in salmonella that it wasn't safe to eat them that way. We've had this problem for a long time. Even though Petaluma is in Sonoma County, where eggs are universal. We undervalue some of our food so greatly.
Eggs are a magical, amazing, complete food and the fact that they cost more than they did for lots of reasons and I'm not going to even address any of the big fundamentals. I'm just going to remind myself how delicious a good fresh farm egg can be and how precious they are, how dear they are, and how much I value them. I don't want to take them for granted.
